So in doing a blog post about peanuts, it hit me. My favorite Carb-Check Diet snacks all start with the letter 'P'.
Regular readers know I've become a big fan of Pork rinds - any flavor - and I've even cranked them up to another level by making nachos with them. It's another dose of YUM!
Trying to replace my love for chips was a big challenge when first starting this diet, but I've found plenty of great substitutes, like Pepperoni chips!
Suggested by a friend of mine on Facebook, when you're craving chips and a crunch factor, throw some pepperoni in the oven!
Place pepperoni in a single layer on an un-greased cookie sheet. Bake at 375 degrees for about 8-10 minutes. Remove the pan from the oven and soak up the excess pepperoni oil by patting paper towels against the 'chips'. Return the pan to the oven and bake an additional 2 to 4 minutes to get them chip-like crispy! Mmmmm-mmmm!
A similar thing can be done with Parmesan cheese. Preheat your oven to 400 degrees F. Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down, space the spoonfuls about a 1/2 inch apart. Bake for 3 to 5 minutes or until golden brown and delicious. Let them cool and harden like a chip. I like to sprinkle my Parmesan cheese chips with Louisiana Hot Sauce, what a GREAT flavor pairing!

Another way to replace chips and that oh-so-desired crunch factor - Popcorn! Eat some popcorn.
Great low-carb snacks start with the letter 'P'. And if you can't find a satisfying crunch factor/YUM factor in these snacks, then I don't know what to tell you.....
